4.Introduction

 

Lactobacillus Helveticus is one of the Gram-positive bacteria, a probiotic, which is long rod-shaped, no flagellum, no budding, colonies round, creamy white, neatly edged, chemoenergetic heterotrophic, parthenogenic anaerobic, not liquefied gelatin.

Lactobacillus Helveticus has high requirements for medium composition, has strong hydrolytic protein ability, grows well in carbohydrate medium containing wort, tomato juice, carrots and yeast powder and in cow's milk. In the synthetic nutrient medium need riboflavin, calcium pantothenate, pyridoxal or pyridoxamine and magnesium, manganese, do not need additional folic acid, thiamin, vitamin B12 and thymidine, etc.
Lactobacillus helveticus fermented milk contains a variety of bioactive peptides that can enhance human metabolism, promote immunity, hormones, enzyme inhibitors, antibacterial, antiviral and hypolipidemic effects. For example, the extracellular protease of L. helveticus CP790 can hydrolyze α-CN and β-CN, and the active peptides produced have the effects of anti-cholesterol, tumor suppression and cholesterol reduction.
